Cubo 2 is the new continuous churning cabinet.
It enables mixtures of gelato or sorbet to be frozen by combining cooling and stirring until the typical semi-solid consistency of a traditional gelato is achieved. The machine is also able to maintain the product structure indefinitely directly in the batch freezing cylinder.
It is possible to refill the cylinder with fresh liquid mixture when the product is sold. During the storage mode, the user simply needs to add the liquid mix and restart the freezing process. The machine will reactivate the program to bring the ice cream back to the original consistency, which takes 60% less freezing time compared to the first batch. The machine then automatically goes into storage mode.
The night mode, which can be set with a timer, allows each batch freezing/storage cycle to be switched off automatically to maintain the temperature in the cylinder like a refrigerator. This ensures that the gelato mix remains at a positive temperature during the night, without any hygienic or health risks.
Cubo 2i varies the whipping speed thanks to its inverter. This makes it possible to produce special recipes such as Sicilian granita and frozen coffee cream.
