Cubo 2 is the new freezer with continuous stirring for the counter.
It enables gelatine or sorbet mixtures to be frozen using a combination of cooling and stirring until the typical semi-solid consistency of traditional gelatine is achieved. The machine is also able to maintain the product structure for an indefinite period of time directly in the freezing cylinder.
It is possible to refill the cylinder with fresh liquid mix when the product is sold. During storage mode, the user only needs to add the liquid mix and restart the freezing process. The machine reactivates the program to bring the gelato back to its original consistency, reducing the freezing time by 60% compared to the first batch. The machine then automatically switches to storage mode.
The night mode, which can be set via a timer, makes it possible to automatically switch off each freezing/storage cycle of a batch to maintain the temperature in the cylinder as in a refrigerator. This ensures that the gelatine mixture remains at a positive temperature during the night without any hygienic or health risks.
Thanks to its inverter, the Cubo 2i is able to vary the mixing speed. This enables the production of special recipes such as Sicilian granita and frozen coffee cream.
